Today I’m going to share my favorite quick, healthy meal. I’ve probably had this sandwich 10 times in the past month or so. It’s really good — plus, it’s really clean and fresh and I just love it! I originally took the idea from this one I found on pinterest, but kind of made it my own.
Ingredients:
- 2 slices of bread (or one if you want to risk making an open face sandwich)
- cucumber
- tomato
- avocado
- alfalfa sprouts
- veganaise (or regular mayo)
- salt & pepper
- (optional) shredded cheese
It’s pretty self explanatory, see photos below. Toast bread, chop everything, spread on some veganaise, sprinkle on some salt and perpper than add everything. I make my sandwiches big and they are so, so delicious. I usually accidentally chop too much and just throw the stuff that doesn’t fit on my plate, sprinkle on some salt and pepper and eat that.
Seriously – try it. It’s SO SO yummy.
