I’ve been having a hard time with breakfast lately. Just plain laziness and the fact that nothing really appeals to me in the morning. For years and years, I had cereal for breakfast. Over the past year or two I’ve been digging a bagel or toast and an egg. However, ever since we got chickens… eggs? Not so appealing! Kind of defeats the purpose of getting chickens for fresh eggs, huh? But Blaine still eats them and I still use them when cooking/baking. So I started having cereal again. Or a bagel. I’ve been feeling guilty about not starting my day right.
I recently ordered some chocolate protein powder because Blaine loves chocolate milk and I’d rather him use protein powder than chocolate syrup. I experimented a little with it and came up with an easy 2 minute breakfast that I’ve had almost everyday for the past couple of weeks.
Ingredients:
Just under 1 cup of unsweetened almond milk*
1 scoop Optimum Nutrition Soy Protein – Dutch Choclate
1 tsp Bee Pollen (info on bee pollen here)
1 whole banana
(optional) tsp of peanut butter
First I put the almond milk and protein powder in my cheapo $18 blender and blend that for a few seconds to make sure the powder dissolves. Then I add the banana and bee pollen and blend for 30-45 seconds. Voila! Two minute healthy breakfast that I can down in a couple of minutes and get on with my day. It’s a pretty thick consistency and might taste even better if you chill it for an hour or so, but it’s yummy enough for me and I usually finish it pretty quickly.
*The reason I use just under a cup is so that it fits in the white mugs we have. They’re easier to drink from than the jar I used to use above. It can obviously be made with a normal 1 cup measurement of almond milk if you prefer a thinner consistency.
