At our house, we don’t eat meat. I say this a lot, I know. We also avoid fake meat for the most part. I know a lot of Vegetarians rely on fake meat products, but I prefer to eat as many whole foods as I can. Plus, around here Morningstar and other similar products are expensive so they don’t really fit into our budget. One fake meat product I buy on occasion is fake bacon (facon!) or sausage (fauxsage? heh) because Blaine loves my Vegetarian Biscuits and Gravy for breakfast on weekends.
Since Blaine comes home for lunch, I make a point to come downstairs from my hobbit hole (office) and eat with him. My parents brought us some Sheepherder Bread from Schats in Bishop that we need to use before we leave town so I thought we’d do some mock BLT’s with a twist!
What you’ll need:
- Bread
- Morningstar “Bacon”
- Mayo (we use Vegenaise)
- Spinach (or lettuce, if you prefer)
- Tomatoes
- Avocado
- (optional, for Blaine’s) Cheese
Honestly, it seems silly to put together instructions. Basically toast bread, add mayo, pile on your ingredients and enjoy! For Blaine’s sandwich, I did a grilled cheese type of a deal and toasted the sandwich on a pan. I prefer the less greasy/cheesy route so I just toasted my bread and added everything on it.
Being a vegetarian can be tough sometimes because it’s hard to think of out of the box, but this sandwich just seems too easy. BLT with fake bacon, add avocado, done.
